Americans waste more food than any other country in the world - nearly 40% of food in the U.S. ends up in the landfill. It comprises nearly a quarter of landfilled municipal waste, releases greenhouse gasses that contribute to climate change, and keeps food out of the hands of those who are food insecure. But innovative chefs across the country are on a mission to change that. Wielding the power to influence food markets, chefs in every dining sector from fine dining to soup kitchens are taking food destined for the trash to the table. They're partnering with local grocery stores, food distributors, and farmers to siphon food surplus into delicious, nutritious, and social media-worthy meals.
